These are basically crustless quiches you can bake ahead of time and reheat in the mornings, for a quick ,hot breakfast. I made half with cheddar cheese and half with spinach (his and hers in our case) but you could use any omelet type ingredients you like! They are also great for serving a lot of people breakfast at the same time!
6-8 eggs, whisked
Any other omelet ingredients you like!
bake at 350 degrees for about 12 minutes or until they start to brown on top. It depends on how firm you like your eggs!
keep (covered) in the fridge for up to a few days
when ready to eat, heat up in microwave or toaster over and serve between a toasted english muffin, or just eat them on their own!
